🍝 Vegan Spaghetti Bolognese with cashew mozzarella, tomatoes and almond parmesan for dinner 😍

👉🏻 Ingredients
For the Bolognese sauce:
200 g firm tofu
1 onion
2 cloves of garlic
100 g carrots (optional)
100 g celery (optional)
2 tbsp olive oil
200 g tomato passata
200 g chopped tomatoes
1 tbsp tomato paste
2 tsp Italian seasonings
1 tsp raw cane sugar (to taste)
salt, pepper
vegetable broth (to desired consistency)

further ingredients:
250 g spaghetti (optional gluten-free)
nutritional yeast
fresh basil
Powered by Chicory
.
👉🏻Instructions
Peel onion, garlic, carrots and celery and cut into thin cubes.
Squeeze the tofu (this works best with a kitchen towel) and then crumble.
Heat the olive oil in a non-stick pan or in a medium-sized, non-stick pot and roast the tofu until golden brown.
Add the onions, carrots and celery and fry until the onions are glassy.
Then sauté the garlic briefly (for about 30 seconds).
Now add the tomato paste and tomatoes and stir.
Season the sauce with salt, pepper, Italian herbs and sugar and simmer for 15-20 minutes over medium heat until the sauce is well-thickened. Add vegetable broth, if necessary.
In the meantime, cook the spaghetti in salted water until al dente and then drain.
Serve the spaghetti with the sauce and garnish as desired with yeast flakes and fresh basil.

spaghetti! 🍝🍃 wholewheat spaghetti bolognese with olive oil crispy sage & oregano 😍 now you'll have to trust me on the crispy herbs - they are such a delicious addition to this super simple sauce 🤗 i've copied in the recipe below👇🏻 hope you enjoy! x

INGREDIENTS
•
- 4 cloves garlic, crushed
- Olive oil
- 500g fresh quality mince of your choice - OR - 2 x cans drained chick peas or black beans, lightly crushed with a fork
- 2 jars 'bolognese' tomato sauce - I've used @barillaaus - you could use your favourite tomato based pasta sauce
- 2 1/2 cups red wine
- Sea salt & pepper to taste
- Small bunch fresh oregano
- Small bunch fresh sage
- 380g spaghetti
- Fresh parmesan to serve
•
METHOD
•
1. In a medium saucepan add 2 tbs olive oil, the oregano and sage leaves, and a big pinch of flaked sea salt.
2. Cook the herbs on high heat until crispy.
3. Remove the herbs from the pot with tongs and set aside on a plate for serving.
4. Using the same pot (don’t rinse - we want those herby flavours) sauté the garlic for a minute or two until soft.
5. Add the mince or crushed chickpeas/black beans and sauté on medium-high heat for a few minutes.
6. Add the pasta sauce and red wine and stir well.
7. Cover and let simmer for about 1 hour.
8. Cook the spaghetti as per packet instructions.
9. Serve with the sauce and top with fresh parmesan and the crispy herbs.

A bit more of a recent video some of you have already had the pleasure of seeing, but since it was our favourite meal this week and I’ve broken a collar bone, here it is once more 👌🏼. Give it a go for yourself:
- 400g spaghetti
- 1 tsp olive oil
- 1 white onion
- 2 cloves of garlic
- 1 carrot, chopped
- 300g chopped mushrooms
- Oregano
- 1 tin chickpeas
- 200g soy protein (we got this from Wooly’s. It’s called textured vegetable protein)
- 2 cups veggie stock
- 8 cherry tomatoes
- 1/2 cup red wine
- 1 tbsp tomato paste
- 1 tin chopped tomatoes
- 2 tsp soy sauce
Once you’ve added all these ingredients, make sure to slowly simmer the mix for 15-20 minutes to allow everything to combine together well. Leave it for longer if you wish, but just don’t burn it. Once done, add some nutritional yeast and fresh basil on top 👌🏼. Job done! #spaghetti #italian #veganitalian

Spaghetti Meatball Nests⁣⠀
INGREDIENTS:⁣⠀
1/2 pound ground beef⁣⠀
1 shallot, minced⁣⠀
2 cloves garlic, minced⁣⠀
1/4 cup plain breadcrumbs⁣⠀
2 tablespoons finely grated Parmesan cheese⁣⠀
1 large egg, beaten⁣⠀
1 tablespoon flat leaf parsley, finely chopped⁣⠀
Kosher salt and freshly ground black pepper⁣⠀
⁣⠀
SPAGHETTI:⁣⠀
8 ounces dry spaghetti⁣⠀
1 large egg, beaten⁣⠀
1/4 cup finely grated Parmesan cheese⁣⠀
3 tablespoons olive oil, divided ⁣⠀
1 3/4 cups marinara sauce⁣⠀
1/2 cup water⁣⠀
Parmesan cheese, for finishing⁣⠀

STEPS:⁣⠀
For the meatballs - In a medium bowl, combine the beef, shallots, garlic, breadcrumbs, cheese, egg, parsley, salt and pepper. Form into 6 (1-inch) balls. Set aside.⁣⠀
For the pasta - Bring a large pot of salted water to a boil.⁣⠀
Add the pasta and cook until al dente, about 7 minutes. Drain and cool.⁣⠀
Once cool, add the spaghetti to a large bowl and toss with egg and cheese until combined. Twist the spaghetti into 6 nests using a fork and a ladle. Let rest in the refrigerator as you prepare the meatballs.⁣⠀
In a 12-inch high-sided skillet over medium heat, add 2 tablespoons olive oil. Add meatballs and brown on all sides. Remove meatballs from pan. ⁣⠀
Wipe the pan clean and add the remaining tablespoon of oil. Very carefully add each “nest” then turn the heat to medium. Cook for 2 minutes so the nests hold their shape. Add a browned meatball to the center of each nest.⁣⠀
Mix together the water and marinara sauce until smooth. Pour the sauce between the nests. Grate cheese over the top. Cover with lid and cook for 10 minutes over medium heat.⁣⠀
To serve, add each nest to a plate and garnish with freshly grated Parmesan cheese.⁣⠀
