This recipe is a spin-off of the pumpkin cashew butter pancake recipe. The pancakes keep for a couple days in the fridge and several months in the freezer.
🍌 👉🏻 ¼ cup coconut flour • ¼ teaspoon cinnamon • ¼ teaspoon baking soda • 2 tbsp. cashew butter butter ( but you can sub any nut butter) • 2 eggs, slightly beaten • 1 egg white, beaten stiff (optional, but makes the pancakes fluffy) • ½ tbsp. maple syrup (you can sub stevia or another sweetener) • 3 tbsp. mashed banana • 2 tbsp. almond milk • 🥞 Paired with a crispy ghee-fried egg 🍳 , sautéed spinach & avocado 🥑.

Nothin’ fishy going on here, just a quick, wholesome lunch featuring one of my favourite ingredients: salmon! I realised that it’s been ages since I posted a pescetarian meal on here, and although I do eat a predominantly plant-based diet, fish is something that I love and eat on a regular basis. Salmon is one of my go-to’s: it’s a rich source of omega-3 fatty acids (healthy fats), protein and micronutrients, plus it’s super easy to prepare and delicious. Including a little animal protein (only in these forms: dairy, eggs and fish) in my diet seems to be my body’s happy point. It limits my environmental impact and aligns with my ethical stance on excess meat consumption, and it fuels my body effectively. It’s a diet that I can sustain, enjoy and live my life fully on. Eating mostly plants with flexibility around a few select, sustainable non-plant-based foods has worked for me for nearly ten years now and I can see myself living this way for a long way to come - what’s your approach?

Mindset is everything.
What do you tell yourself that you can’t do that holds you back from living your best life? 
You can’t travel?
You can’t lose weight?
You can’t make friends?
You can’t beat your eating disorder?
You can’t change your career?
I promise you.

All of these things you can do.
You can do anything you want to do and become anything you want to be 💪🏻
Mental health, body image and eating disorder issues don’t discriminate about how you look.
As you can see by the photo on the left, I was wearing a one piece because back then I would have never worn a bikini!!
I was also in a continuous battle against my binge eating and hate for my body.
Until one day I just gave up on myself and ended up gaining over 60kgs in the 8 months that followed. 
I learned my lesson the hard way.
That happiness comes from the inside, not from the outside.
Not from how you look, what you wear or how much you weigh.
But from your heart, your mind and your soul.
How you think and how you feel
Are KEYS to finding happiness.

I haven’t beat my binge eating habits YET.
But I believe I WILL beat them.
That is the difference between the girl on the left and the girl on the right.
The girl on the left was filled with so many personal issues that she let inhibit her from living her best life.
The girl on the right doesn’t let anything hold her back from enjoying her life to the fullest. She believes she can have anything she puts her mind to. She believes that limiting beliefs should be challenged. 
Like, I can’t wear a bikini….?
Clearly I can 👆🏻👆🏻👆🏻👆🏻
Or I will never be happy…?
Well, finally I am 👆🏻👆🏻👆🏻👆🏻
Humans are raised with limiting beliefs from babies.
We believe them without question!
Has anyone ever told you you can’t do something and you’ve proved them wrong? 
Try proving yourself wrong when you tell yourself you can’t do something.
Challenging limiting beliefs is the best thing I ever learned to do!
You can travel!
You can lose weight!
You can make friends!
You can beat your eating disorder!
You can change your career!
I promise you.
